2015 del Rios Sauvignon Blanc
The del Rios barrel-influenced style of Sauvignon Blanc differs from the more mainstream, more fruit-filled style, we seek to create a more complex expression of the fruit. The wild yeast used for fermentation provides a more subtle articulation of the fruit, a more generous palate, and greater longevity.
Complex mineral and gooseberry flavours, subtle oak, finishes crisp and dry.

The hand-picked fruit was whole bunch pressed. 50% of the juice was racked off sediment to another tank and inoculated. The other 50% was left to undergo natural fermentation. The wild yeast provides a more subtle expression of the fruit, a more generous palate, and greater longevity.
