In what were near ideal ripening conditions the 2012 vintage will turn out wines with impeccable varietal flavours of great intensity. Our Cabernet was picked 7th April with a harvest analysis of 13.5°baume, pH 3.6 and an acidity of 5.5 grams/L. Quality looked good with the Cabernet showing good round, fully ripe flavours, with structured tannins. Yields were down to a moderate 2.5 tonne/hectare, giving the wine the potential for concentration and richness. 14% alc

Detailed Information

The hand picked fruit was crushed and destemmed with a portion of juice drained off for concentration purposes and fermented into open fermenters which were plunged prodigiously Pressed after two weeks the wine was racked to 1-5 year old oak barrels with 25% new tight grained French oak.

After the malo-lactic fermentation in September, the wine was racked and sulphured  and spent a further 10 months in oak, before final assessment and blending in mid July 2013. The wine was fined with egg white, cross flow filtered in August and bottled in September 2013.
