Production notes
The fruit was chilled prior to being whole bunch pressed via an air bag press. The must was then fermented in 2-6-year-old French oak barrels. It completed malolactic fermentation, and then spent a total of 14 months in barrel. It was then racked and blended in a stainless-steel tank with no further fining.
