Tasting notes
Beautiful candied strawberry and cranberry aromatics on the nose and palate with velvety acids and soft black tea tannins to follow. Subtle hints of mushroom and vanilla from the oak barrels. Confectionary and lifted strawberry evident of carbonic maceration as well as a slight stemminess defining of that style.

Production notes
The fruit was chilled and destemmed into small, open fermenter tanks. The fruit was divided into 6 different ferments and were kept smaller to control the cap thickness. It was gently hand plunged one to three times a day to regulate the cap temperature. After 4 weeks on skins the must was pressed to tank where it started malolactic fermentation. A small parcel of fruit was kept separate and went through carbonic maceration.
