Tasting notes
This vintage is a little leaner than previous vintages, defined by a lovely line of citrus acidity. The nose is tight, but exhibits quince, cut grass, interwoven with a flinty minerality which balances the acidity. It has a lovely texture and mouthfeel, finishes with hints of matchstick.

Production notes
The fruit was chilled and then whole bunch pressed using an air bag press. The must was then fermented in old French barrels. It went through malolactic fermentation prior to being sulphured, and then spent 11 months in barrels. It was then racked and blended into a stainless steel tank with no further fining

Q. What is a Fumé Blanc?
A. Fumé Blanc is used to refer to a particular style of wine made from Sauvignon Blanc grapes. It is generally fermented and/or matured in oak and has greater depth and complexity relative to the more mainstream expressions of Sauvignon Blanc. It was coined by Robert Mondavi in the 1960s, where he took the French word ‘Fumé’, referring to a smoke-like vapour or substance and also enshrined in the name of Pouilly-Fumé of Loire Valley, and the French for white, as in ‘blanc’.
